It’s been a busy week. It’s Orientation Week, so I’ve been attending numerous information sessions and meeting my new classmates. A lot of the information has been repetitive for me since I haven’t changed schools in a while, just moved from program to program. Next week, classes start! Please forgive any delay in my responses while I adjust to my new schedule.

Check it out! Eva from Kitchen Inspirations tried out (and changed up) the homemade ginger ale recipe I posted a while backHer version of the ginger ale is amazing, check it out! (And maybe browse her blog a bit while you’re there. Eva has posted some fantastic recipes, I’ve been following her blog about 6 months now and love the food she posts.

Lately, I’ve preferred making meals that are simple with minimal clean-up. I like spending less time cleaning up after cooking (who doesn’t?). I like having all the flavours mixed together. Here are a few recipes I’ve come across this week that fit with that theme and will likely influence what I’m cooking over the next few weeks.

Southwest Chicken And Rice from Simple Farmstead Cooking

Moroccan Chicken and Orzo from Cheap, Healthy, Good

Mushroom-Almond Rice from The Indian Food Court

Masala Peas and Potatoes from The Footloose Chef

Ground Turkey & Quinoa Skillet Meal from Ginger Lemon Girl

The Improv Challenge is next Thursday… and I’m looking for some inspirations! The ingredients for the challenge are corn and butter. It seems too easy to make corn on the cob slathered in butter. Don’t get me wrong, it’s one of my favourite side dishes and I have nothing against a simple meal. But… I feel like I should make something a bit more interesting for the challenge! Today’s likes are a few of the recipes I’m considering, but please feel free to make more suggestions in the comments! I’d love to hear what you would prepare with corn and butter!

Moist Cornbread (lightened up) from Cooking Classy

Grilled Corn with Cilantro Butter from Baking with Blondie

Sweet Corn Butter Chaat from Spill the Spices

Bắp Xào Tôm Bơ – Vietnamese Sauteed Corn with Dried Shrimp, Scallions, and Butter from Gastronomy Blog
